October is one of my favorite months. I love the weather, the fall foods, the colored leaves on the trees, and Halloween. Throughout this month I plan on blogging about fall food, Halloween snacks, and related topics.

And I love pumpkin soup. And its good for you too. Here's my simple recipe for this autumnal favorite. Share with me your versions and variations!

Easy Pumpkin Soup (vary amounts depending on how many you plan to serve)

1 Large Can Pumpkin (Not pie filling, real pumpkin)
1 Can Chicken broth
3 Cloves Minced Garlic
1 Tablespoon Sage
1 Tablespoon Curry Powder
Maple Syrup to Taste
Salt to Taste

Add the garlic and chicken broth to a sauce pan and allow to simmer for a while. Then, slowly add the pumpkin, thoroughly mixing as you go. Allow to simmer, but avoid boiling if possible. Add the sage, curry, and salt. Stir often.

Before serving mix in Maple Syrup to taste.
