As we enter Autumn, I plan on blogging periodically about the foods of the season. Today, I'd like to focus on apples. Most people either eat this fruit plain or bake them in pies. And they are lovely this way.

However, I've been experimenting with different ways to cook with apples. They are fantastic as a dessert or side dish baked with cinnamon and nutmeg -- no crust required. 

 Another way of using this healthy and tasty fruit is with fish or meat. When the fish or meat is almost done, peel an apple or two (depending on how many you are feeding). Once the apple is peeled, slice it, not taking too much from the core. Add the slices to the baking pan or frying pan and allow them to warm and absorb the flavors and juices of the dish. A little warning -- it there is too much liquid in the pan or dish, the apples will fall apart and turn to mush, so try to add them to a dryer cooking environment for best results. 

The apples and the meat/fish should finish cooking, requiring just a few minutes. The addition of fruit on the side is a nice sweet addition to a savory meal.
