Unique Appetizers

What are some of your favorite, unique appetizers? When I have company over, I enjoy offering a full meal, complete with appetizers. And I try hard to think of things to serve besides the ordinary.

One of my favorite appetizers is bruschetta. This easy to make dish usually pleases everyone. You take thin slices of bread, heat them, drizzle them with olive oil, and the top them with garlic, beans, tomatoes, basil, meat, cheese ... whatever you fancy. 

Another appetizer I like is better suited to winter. Its a hardy mash of lemon potatoes with curried lentils and spinach. The potatoes are boiled, then taken out before they turn too mushy. You then slice them and fry them in lemon juice and olive oil. Then you slightly mash them and add curried lentils and chopped fresh spinach. Its a great, warming appetizer or first dish.

Smart Menu(R) Chips and Salsa is always a big hit with friends and family. I can't tell you how many people start buying the salsa after trying it.

I like appetizers to be as easy to make as they are to eat. Here are a few of my simple successes: Spread cream cheese on a platter in a thin layer, then top a Raspberry Chipotle Preserves - it is sweet - with a kick! Serve with a Peach-Mango chips -- surprise and flavor galore! Another favorite: I used to have a fabulous salsa garden- I grew my own ingredients - now I rely on the fresh salsas available in our local grocery store -- I add my own twist to keep it mine! First drain and rinse a can of blackbeans and a can of sweet corn. Add to two containers of refrigerated (fresh) salsa - we prefer one mild and one medium. Mix it up and chill for about an hour - serve with your favorite chips (we prefer the BBQ crunch zone) and watch it disappear! I could share many more... but think I'll save them for a book! :) "Appetizer Queen..."

I have a mango-black bean salsa recipe that is addictive. I've also found that frittatas go over well as an appetizer, either single-serving sizes made in mini muffin tins for casual events or small portions of a large 'tata for sit-down dinners. Grilled shrimp glazed in a fruit sauce is another nice one. I just use whatever juice or preserve I have on hand
