Spelt

Looking for something to spice up pasta once in a while? Try spelt pasta. Spelt is a nutritious grain and wonderful alternative to wheat. Spelt pasta is labeled as such and is usually darker in color. Spelt is slightly higher in protein than wheat pasta, earthy tasting, and can be used just like wheat pasta in any dish. I like it with fish, finding the slightly stronger flavor of spelt brings out the finer flavors of fish.

Spelt is not gluten free, so if you are gluten sensitive, spelt won't work. My nephew has Celiac's disease, an autoimmune reaction to gluten, wheat, and related grains. The solution for my sister, his mom, is pasta made from rice flour, another pleasant alternative to wheat pasta. Other alternatives include corn, buckwheat (not really wheat) and potato flour.

Don't get me wrong, I like wheat pasta, but something different once in a while can be a treat. Give spelt a try and tell me what you think.

Spelt is also a great way to add a little something to "porridge" or hot oatmeal... sometimes Kamut too. Spelt is an ancient grain, mentioned as being cultivated in Egypt in the Book of Exodus.
