Potato Appetizer

I would imagine that most of us think of the potato as a side dish best served with meat. However, in my effort to create meals that involve more vegetables, I came across some creative uses for the versatile potato. Here is one suggestion:

Endive Potato Puree Appetizer

Several endive leaves, crisp and firm
2-3 boiled, then mashed, potatoes with butter and seasoning
1/4 cup of lentils
Sauteed onions

1) Boil and mash the potatoes. Season with butter, salt, pepper, and sage. Parsely and/or cilantro works nicely too.

2) Boil and mash the lentils. Mix them with the potatoes. The potatoes should be creamy, the lentils merely crushed.

3) Sautee the onions until clear and sweet.

4) Fill the endive leaves with the potato-lentil mash and top with the onions. Arrange on a serving plate.

It makes a hearty, pleasant winter appetizer.
