Holiday Treat -- Rice Pudding

Growing up, my great-grandmother would make rice pudding for me at Christmas time. Unfortunately, I don't have her recipe. But I will share one with you that I've used before with good results.

2 1/2 cups of whole milk
1/3 cup of white rice
Pinch of salt
1 egg
1/4 cup brown sugar
1 tablespoon vanilla extract
1 tablespoon ground cinnamon
1/2 cup of raisins

Combine the rice, milk, and salt in a large sauce pan and allow it to come to a boil. Reduce heat quickly to just a simmer and allow the rice to get tender, usually about 20 minutes. Stir often to prevent the milk or rice from burning and sticking.

In a mixing bowl, whisk the sugar, vanilla, and egg together until completely mixed.

Add the egg mixture to the milk and rice, stirring frequently on a low heat until thickened. Do not let the pudding boil. Add the raisins and cinnamon when finished.
