Almond Christmas Cookies

Many of my friends with children begin baking Christmas cookies around now, in this run-up to the holiday. They serve some and freeze the rest, taking a few out of the freezer each day until we reach the 25th. Here is a recipe for almond Christmas cookies that I love:

2 sticks butter
2/3 cup of powdered sugar
2 teaspoons of vanilla extract
2 teaspoons of almond extract
1 cup of ground, blanched almonds
2 1/2 cups all purpose flour

Preheat the oven to 350 degrees and grease a cookie sheet or use parchment paper.

Beat the butter and sugar together with the extract until creamy. Then add the almonds. When fully mixed, begin adding in the flour until the entire batch is smooth and even. If the mix appears dry, use an egg in the mix.

Shape cookie dough into crescents or use cookie cookers for holiday shapes.

Bake for 15-20 minutes or until light brown. Grease the cookies with melted butter and add colored sugar or sprinkles.
