Miso Soup

I love Japanese food! And I love miso soup. Miso is slightly fermented soy paste. It comes in a few flavors, such as mild, salty, and sweet. Its good for you too!

Miso soup is easy to make and delightful on a cold day. Here's the simple recipe:

3 cups of dashi soup stock (Dashi is fish stock. Any fish stock will do and many supermarkets have dashi stock).
3-4 tablespoons of miso
1 chopped green onion.

Bring the dashi stock almost to a boil. The kind of dashi stock made from fish shavings requires straining at this point. Adding some seaweed gives extra flavor and higher nutritional value.

Take the miso paste and mix with warm water until dissolved in the liquid. Then add to the stock. Do not boil, since boiling takes away from both the flavor and nutritional value.

Simmer for 5-7 minutes, adding green onions. You can also add mushrooms or tofu, both are popular additions to miso soup. I like adding shrimp, since miso and shrimp are a perfect combination.

Serve warm. Simply add more stock and miso to taste and for larger serving sizes.

I'm of Japanese descent and miso soup is something that I grew up with. It's still one of my favorites. You can also drizzle some raw egg into it,heat to boiling, add white rice and tofu and you have a nice snack!
