Soup, the Perfect Winter Meal

Here in West Michigan its starting to feel like winter after a long, moderately warm autumn. And as the nights get dark and cold, I start making soup, the perfect winter meal. Soup is easy to make, hard to screw-up, and satisfying on a cold night. Even better, there's only one pot to clean when you're done. And it keeps well too!

I am not a soup purist. I don't believe you need to make your own stock from scratch for soup to be good. Most grocery stores offer boxed soups, many of them organic, that will serve as the perfect base-stock for any soup you want to create. You can also find pre-made stock mixes. And in a pinch, plain old chicken broth works fine.

Some of my favorite soups? Butternut squash bisque with curry, barely, and shrimp. Irish fish stew with potatoes and sage. And ginger-carrot with peas and chicken. I love miso too, the Japanese soy paste that makes delightful soup stocks and can be added to many recipes.

Butternut Squash and Tomato soups are my favorite... and homemade veggie soup.

I make a minestrone (called Upstate Minestrone) that's been called so good it's worth getting sick to have (it's what I send to those battling illness or injury!)  Would be happy to share the deceptively simple recipe.
