- Special Diets

One more thought inspired by our recent conversations and posts about vegetarian dining -- special diets. I am sure we all know people who due to food allergies or health concerns, religious and philosophical commitments, or personal preference, adopt a special diet.
For example, my nephew, Jonathan has Celiacs disease. His diet has to be wheat and gluten free. His sister, Ashleigh, is diabetic, so, limited sugar for her. My sister is a real champ managing the dietary needs for both. In fact, she's been so health-inspired, she's gone back to college for a nursing degree.
I know other people who follow a Kosher regime, some who are vegans, and even some who will eat only locally grown and produced food. There's even the Slow Food movement, dedicated to preserving regional cuisine and food traditions, environmental protection, and taking the time to truly enjoy the preparation, eating, and sharing of food.
