Pomegranate Chicken
Serves 4 with enough for seconds or leftovers

2 shallots, minced
2 cloves garlic, minced
2 Tsp of lemon juice 
1/2
 cup pomegranate juice
1/4 cup olive oil
Several sprigs thyme 
2  bay leaves 
Crushed black pepper to taste 
8 medium skinless, boneless chicken *** halves, or 6 large ones 

Blend the ingredients (except the chicken) together.  Then marinate the chicken in ingredients, cover, and place in the fridge for at least an hour.

Preheat the broiler. Broil the chicken for 5-8 minutes on each side. Pay careful attention, since cooking time depends on your particular broiler's habits. When you turn the chicken, brush a little of the leftover marinade onto the uncooked side before returning it to the broiler.

Use the remaining marinade as sauce. Pour it into a small pan and heat until boiling. Let it bubble for a few minutes, then taste—if it’s too strong, dilute with a little chicken broth or water. A pat of butter can be used to to richen and thicken it, if you like.
